Here's one of my favorite bowls yet!! Roasted sweet potatoes, roasted kale, pickled red onions and a lemon harissa vinaigrette come together with Wild Planet Sardines for a protein and nutrient packed dish. Wild Planet's sardines are sustainably sourced and essentially "nutritional powerhouses," packed with high levels of EPA and DHA Omega-3s and essential nutrients such as protein, calcium, iron, potassium and vitamin D! All of this packed into this already nutrient dense bowl, makes it the perfect meal prep or easy weeknight dinner!

Ingredients

    Roasted Sweet Potatoes

  • 1 Sweet Potato, cubed

  • 1 tsp Salt

  • 1/4 tsp Black Pepper

  • 1/2 tsp Onion Powder

  • 1/2 tsp Garlic Powder

  • 1 tsp Smoked Paprika

  • 3 Tbsp Oil

  • Roasted Kale

  • 1 bunch Kale, chopped

  • 2 Tbsp Oil

  • 1/2 tsp Salt

  • Quick Pickled Red Onions

  • 1/2 Red Onion, thinly sliced

  • 1/2 cup Vinegar

  • 2 Tbsp Sugar

  • 1 tsp Salt

  • 2/3 cup boiling Water

  • Lemon harissa vinaigrette

  • 2 1/2 tsp Harissa

  • Juice of 1 Lemon

  • 1 tsp Oregano

  • 1/2-1 tsp Salt

  • 1 Garlic Clove

  • 1 small Shallot

  • 1 Tbsp Honey

  • 1/2 cup Olive Oil

  • To assemble:

  • 2 cups of Rice, cooked according to package

  • 1 (4.4oz) can Wild Planet Wild Sardines in Extra Virgin Olive Oil

  • 1/2 Avocado, diced

  • 1/4 cup Radishes, thinly sliced

  • Microgreens for topping, optional

Directions

  1. In a heat-safe jar, add boiling water, sugar, and salt. Mix until sugar and salt dissolve. Add vinegar and mix. Add thinly sliced onions and push onions down to ensure all of them are in the pickling liquid. Let sit for 1-2 hours at room temperature. 

  2. To a sheet pan, add cubed sweet potatoes, oil, salt, onion powder, garlic powder, black pepper and smoked paprika. Toss to combine. Bake at 400F for 15-20 minutes. Remove and push sweet potatoes to one side of the baking sheet. Add chopped kale, salt and oil. Toss to combine. Bake at 400F for another 10 minutes or until kale is slightly crispy.

  3. In a blender, add harissa, lemon juice, salt, oregano, garlic, shallot, honey, and olive oil. Blend until combined and emulsified.

  4. To assemble, add cooked rice to a bowl along with roasted sweet potatoes, roasted kale, pickled onions, thinly sliced radishes, diced avocado, Wild Planet sardines, and optional microgreens. Drizzle with lemon harissa vinaigrette and enjoy immediately!
